The brewing process happens under NITROGEN pressure in a sealed and temperature-controlled environment, in stainless steel tanks. After SCOBY is grown directly in coffee under the pressure where there is no sugar added, fermentation happens based on natural coffee sugars and caffeine and it results in natural kombucha carbonization. As SCOBY eats away all sugars, there is no possibility for over-fermentation. Therefore, our kombucha doesn't need to be pasteurized, which keeps all-natural kombucha benefits in the beverage. At the final stage of the fermentation, we add natural sweeteners to balance beverage flavor. This product is an active natural probiotic and contains natural vitamins C, B1, B6, B12, natural acids, and caffeine.
