Third Wave Water’s next big project is helping coffee drinkers that love Dark Roast Coffees have a better overall experience. Most Third Wave Water customers are getting great results with a variety of coffees using the current water profiles but further testing proved a New Water Profile could serve their tastes even better. The Dark Roast Profile was engineered to provide a larger window of success in acquiring tasting notes typically enjoyed in darker roasted coffees while avoiding bitter or off flavors and protecting coffee equipment. The most notable tasting difference experienced is a highlighted nutty, chocolatey and smooth sweetness.
The Dark Roast Profile uses Sodium Bicarbonate as a buffer in a similar dose as the Magnesium Sulfate. This provides a larger muted envelope for some of the acidity and floral or bright aspects, allowing tasting notes typically enjoyed in dark roast coffees to be highlighted.
The ingredients used provide additional protection for coffee equipment utilizing permanent hardness minerals that remain in solution rather than minerals that create temporary hardness, which separate when heated causing scale.
